Abstract

Honey is a natural product produced by bees because it contains good nutrients. This research aims to determine the secondary metabolite content and antioxidant activity of honey from bees (Apis cerana) originating from Kajulangko Village, Ampana Tete District, Tojo Una-una Regency, Central Sulawei.This research was carried out from June to August 2024. Located in the Research Laboratory of the Chemistry Department, Faculty of Mathematics and Natural Sciences, Tadulako University. The research method used in this research is a descriptive method by looking at changes in color and liquid form in alkoloid, flavonoid, tannin, saponin and steroid compounds. Phytochemical analysis was carried out on an ethanol solution of honey from bees (Apis cerana). The DPPH method is used to determine its antioxidant activity. The results of phytochemical analysis carried out on honey using 98% ethanol solvent on bee honey (Apis cerana) were positive for containing 3 compounds, namely tannins, flavonoids and saponins. The results of the antioxidant activity test using the DPPH method on honey from bees (Apis cerana) had an IC?? of 171.9535 ppm.
