Abstract

There search aims is determine the added value of red ginger after processing into ginger drinks in the Sal-Han Industry in Palu City. The research was conducted in March 2020. The number of respondents werefive employees and one company leader, which the total number weresix respondents. The research was used primary and secondary data.The results showed that the production of instant ginger coffee drinks in the Sal-Han Industry during March 2020 was used 20 kg of dry red ginger which it’s produced 85 kg of ginger coffee and produced 470 packs of ginger coffee drink which were divided into two packages i’e.200g and 100g. The amount of ginger coffee production income in the Sal-Han Industry was Rp3,163,222 the added value was Rp748,029.42 with a profit of Rp700,252.42 or 93,61%. The added value of ginger coffee production is influenced by the amount of input, prices, and output.
