Abstract

Chicken is the most common animal consumed by the public so far, because the meat is easy to get and the price is affordable. along with the increasing consumption and demand for chicken meat, there are traders who resell meat that has been dead for several days. This problem causes some sellers to use preservatives or chemicals such as formalin, borax and other ingredients. Formalin is a chemical which, if consumed continuously and excessively, can cause side effects such as abdominal pain, seizures, unconsciousness and even coma which can lead to death. therefore the authors conducted research to classify the differences between fresh chicken and formalin chicken using hsv imagery, image is a science that studies image processing techniques in the form of photos or moving images while hsv is one of the feature extraction used in color segmentation, using backpropagation neural network algorithm, titual neural network is an information processing system that is designed to imitate the workings of the human brain by carrying out the learning process through changes in synopsis weights, where the results of the classification ability of the artificial neural network obtain an accuracy value of 88.88%.
