Rosella flower (Hibiscus sabdariffa L.) has high levels of Vitamin C. Vitamin C in rosella flowers is able to counteract free radicals that cause degenerative diseases. Antioxidants are needed by the body to prevent oxidative stress. Ginger is very effective in preventing or curing various diseases because it contains gingerol which is anti-inflammatory and It has very strong antioxidant. This research aims to analyze the levels of vitamin C and antioxidant power in rosella flower infusion of ginger as an alternative functional drink. The type and the design of this research used an observational descriptive design based on laboratory tests. The variables analyzed were levels of vitamin C and antioxidant power. Vitamin C levels were analyzed through the iodimetry method. Antioxidant power was analyzed through the DPPH method. Data on vitamin C levels and antioxidant activity were analyzed using One-Way ANOVA and Duncan's advanced test. The results of this research indicate that the formulation chosen is F3 with the highest vitamin C content of 71.522 mg/100 g and contains the strongest antioxidant power with an IC50 value of 37.926 ppm. The results of statistical analysis on the vitamin C content test are p = 0.001 and on the antioxidant activity test, namely p = 0.000 which show that there is a significant difference between the vitamin C content and the antioxidant power of the various formulations. The results of the Duncan test reveal that there are differences between all formulations, and the results of the Pearson Correlation test indicate that there is a very strong relationship between vitamin C levels and antioxidant power in the formulations p = 0.000.
