Red ginger, white ginger, and palm sugar are abundant natural resources in Central Sulawesi at low prices and contain active compounds that are beneficial to health, one of which is antioxidants so it is very useful to maintain our body's immune system from free radicals. This study aims to determine the phytochemical substances, nutrient levels, antioxidant power, and acceptability tests contained in the steeping of Gula Semut Red Ginger and White Ginger. This type of research is descriptive observation based on laboratory tests. The statistical analysis test is One Way Anova and Kruskal Wallis. The results show that Gula Semut red ginger Molomamua and Gula Semut white ginger steeping contain phytochemicals, namely alkaloids, flavonoids, polyphenols, and tannins. The highest beta-carotene content is 34.859 mg/100g in the steeping of Gula Semut red ginger, while 31.460 mg/100g in Gula Semut white ginger. The highest vitamin C content is 4.737 mg/100g for Gula Semut red ginger Molomamua, while 3.773 mg/100g for Gula Semut white ginger. The antioxidant power in the steeping of Gula Semut red ginger Molomamua is stronger with an IC50 value of 87.754 ppm. The results of the acceptability test most favored by panelists are Gula Semut white ginger.
