Food bars are a type of semi-moist food, making them a viable option for emergency food due to their longer shelf life under pressure compared to other products. This study aims to analyze the acceptance test, proximate value, energy, fiber, antioxidant capacity, and nutrition facts of the selected formula of food bars based on purple sweet potato and soybean flour. This research is a quantitative study with a pre-experimental design. The acceptance test used the Kruskal-Wallis test with significance at a<0>0.05). The research results per 50 grams of food bar F3 showed that the carbohydrate content was 41.16%, meeting emergency food requirements, the fat content was 46.71%, not meeting emergency food requirements; the protein content was 12.12%, meeting emergency food requirements, and the water content was 6%, not meeting emergency food requirements. The ash content was 1.985 ± 0.042425, the fiber was 1.4575 ± 0.060105, and the research result of antioxidant capacity was 174.3550±1.68999, with a weak category.
